Es Torrent has its own fishing boat, a traditional llaüt that provides our pantry with the most appreciated specialties of the Pitiusan sea. The vessel is called ‘Nuevo San Antonio’ and works along the east coast of Ibiza. Guillermo, the skipper, and Marcos, his assistant, work on board, which vary in rigging throughout the year, depending on the seasons of each species and the bans.

During the summer, the nurseries fill us with lobsters and also provide us with such delicious species as the San Pedro rooster or the red rooster, along with cuttlefish and varied rock fish with which we make the intense broths that enhance the flavor of our seafood stews.
The acquisition and maintenance of the ‘Nuevo San Antonio’ is a commitment to Ibizan artisanal fishing, with the aim of maintaining traditions and offering our customers the authentic local product that reigns in our kitchen.
