Millor arribar amb l\u2019est\u00f3mac buit i gaudir al m\u00e0xim de productes tan frescos i saborosos, que elaborem amb el major respecte. No obstant aix\u00f2, quan els cambrers dipositen sobre la taula l\u2019aperitiu de la casa \u2013olives i una terrina de all i oli casol\u00e0\u2013, gaireb\u00e9 ning\u00fa aconsegueix resistir-se. Aquesta salsa exquisida, emblema de la nostra gastronomia, destaca pel seu sabor intens i natural. No obstant aix\u00f2, bona part del seu \u00e8xit cal atribuir-li-ho al pa artes\u00e0 que l\u2019acompanya, el denominat pa pag\u00e8s, que constitueix un altre emblema d&#8217;Eivissa.<\/p>\n<p>Com en molts altres llocs, la necessitat d\u2019elaborar pa va afectar notablement al paisatge arquitect\u00f2nic de la illa, amb la construcci\u00f3 de molins de vent, d\u2019aigua o de sang. Totes les cases de camp, aix\u00ed mateix, disposaven d\u2019un forn tradicional al que se solia accedir directament des de la cuina. El pa, excepte a la ciutat, no solia adquirir-se en els comer\u00e7os sin\u00f3 que s\u2019elaborava en les llars.<\/p>\n<p>Del pa pag\u00e8s el primer que crida l\u2019atenci\u00f3 \u00e9s la seva forma arrodonida \u2013quan \u00e9s allargat es denomina coc-, la seva textura tupida i saborosa, la seva durabilitat \u2013es conserva durant una setmana sense problema\u2013, i la seva abs\u00e8ncia de sal, la qual cosa sens dubte constitueix una veritable singularitat. Se solia elaborar cada set dies, amb farina blanca, integral o mescla de les dues, a m\u00e9s d\u2019aigua i llevat. En algunes llars, en aproximar-se dies assenyalats, li afegien llavors de batafaluga.<\/p>\n<p><a href=\"https:\/\/www.estorrent.net\/wp-content\/uploads\/2016\/12\/P1410175.jpg\" rel=\"lightbox[17037]\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17027\" src=\"https:\/\/www.estorrent.net\/wp-content\/uploads\/2016\/12\/P1410175.jpg\" alt=\"p1410175\" width=\"900\" height=\"601\" srcset=\"https:\/\/www.estorrent.net\/wp-content\/uploads\/2016\/12\/P1410175.jpg 900w, https:\/\/www.estorrent.net\/wp-content\/uploads\/2016\/12\/P1410175-300x200.jpg 300w, https:\/\/www.estorrent.net\/wp-content\/uploads\/2016\/12\/P1410175-700x467.jpg 700w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>Per a la seva preparaci\u00f3, s\u2019aboca la farina en un llibrell i el llevat, pr\u00e8viament desfet amb aigua t\u00e8bia. El llevat s\u2019obt\u00e9 d\u2019una porci\u00f3 de pasta de la setmana anterior, conservada en oli d\u2019oliva. Despr\u00e9s de pastar tots dos ingredients, s\u2019incorpora aigua fins a obtenir una pasta ni massa dura ni tampoc tova. Quan est\u00e0 llesta, la font es cobreix amb draps i es deixa reposar unes hores fins que la pasta creix. Mentrestant, el forn es calent amb llenya fins que les seves parets adquireixen un to blanquin\u00f3s, la qual cosa significa que ja ha aconseguit la temperatura ideal. Se\u2019ls d\u00f3na la forma rodona als pans i, despr\u00e9s de granar la llenya i la cendra de la superf\u00edcie del forn, es posen a coure. \u00c9s tradici\u00f3 marcar els pans amb un senyal de la creu, que despr\u00e9s de la cocci\u00f3 roman. Al cap d\u2019una hora i mitja o dues de forn, est\u00e0 llest.<\/p>\n<p>A m\u00e9s del pa, s\u2019aprofita per realitzar altres elaboracions com per exemple les crostes, barres de pa dur que es deixen en el forn fins a l\u2019endem\u00e0. Queden dures i cruixents i despr\u00e9s de trossejar-les i humitejar-les amb aigua, es prepara amb elles una espectacular amanida amb tom\u00e0quet i all picat, a m\u00e9s d\u2019altres ingredients al gust, com a peix sec, ceba, pebrot\u2026 No hi ha cultura gastron\u00f2mica sense un pa meravell\u00f3s i identificatiu.
